For vegan and health-focused consumers, Veggie Thumper is an all-vegan and veggie-forward restaurant that provides convenient and affordable access to healthy and organic fare. All experiences at Veggie Thumper are different, with the moving site offering a new menu each week depending on available produce. Some current options include Philly “Cheesesteak” with a housemade steak and cheese sauce, caramelized onion, peppers and root wedges; the BBQ “Chick’n” Nachos crafted with white beans, housemade vegan queso, sour cream, black beans, poblano peppers, jalapenos, verde salsa and cashews; and Smoked Cheddar Mac and Peas (pictured above) with peas and parmesan cheese. Each dish can be modified to be gluten and nut free for those with dietary restrictions. The food truck in Des Moines can be found seasonally starting in April, with its location posted online.
